Currently running Mojave 10.14.6 on my 2017 MacBook. I go into System Preferences and then software update. Then I check for updates. I am enrolled in the beta but never attempted to download Catalina until now. It shows Catalina is available for download. I hit "Upgrade now" and it shows it's downloading the update towards the 8.09GB. It finishes and then saying INSTALLING UPDATE but then just stops and goes back to checking for update. This time it shows the update available again but says (null) - 8.09 GB and gives me the option to "Upgrade now" and the process repeats.

Any suggestions?

I would check "about this Mac" and see if it actually got installed. If not, reboot and check the OS version again. If still not installed, try the upgrade again. Make sure you have enough hard drive space, as this is sometimes a symptom of not enough for such a major upgrade.
