cellular watch + iPhone SE

I'll upgrade my iPhone SE in a few months.
I'd like to buy the Apple Watch with cellular now and use it together if at all possible.

Will some functions work e.g. the GPS/wifi calls/text, heart rate, pacer for gym?
Or it just won't set up together at all?

You'll be fine. The only consideration is that you may need the newest version of iOS on the phone.
