I can't believe that i've never heard of this before, but there's a really cool vector graphics app called Cenon that just released a new beta. It's available for openstep, gnustep, and osx (cocoa, of course). This thing starts up in a flash and looks like it's very nice for simple to moderate vector work. I've been praying for months now that Sodipodi will make it out of the unstable tree in fink, but this looks like it will hold me over for quite a while.
With ghostscript installed, you can even import/export pdf, although it doesn't seem to recognize my fink ghostscript install (but with quartz, pdf shouldn't be that hard to implement natively).
