Change / add metadata pdf file.

Hi,
I have manage to change some metadata in a pdf file but what I want is to change the category in the pdf file metadata.
I can't find out how?

Reason I want that is because I have started to add my pdf files in iBooks.

So do someone know how to add categorys in the metadata?
