change AppleCare+ coverage on a MacBook?

I purchased a used M1 MacBook Air and it is covered by the yearly/annual AppleCare+ plan.

Is there a way for me to purchase the up-front 3 year coverage and pay the difference?

Generally the only AC purchasing paths are what you've bought initially and then going with an extended plan if it's offered at the end of your initial term. But the best answer you'll get is by calling the AppleCare Administration Department. Call the general support number and then ask to be transferred to the AC Admin team.
