Is it possible to change the colour of the iPhone associated with it in iTunes. My phone has become white (iPhone 4) and I would like it to show up as white in iTunes.

Nope. Your iPhone serial number tells iTunes that you have a black iPhone. So even though you have changed your phone to white physically, to Apple it will always be a black one.
