Change dictionary in iWork 09

I'd really like my spelling to be in UK english rather than USA english. How do I change this?

Do you have British English set as the default language for OS X? Go to System Preferences > International & drag British English to the top of the list.

You can also change the language for specific text by selecting the text & changing it in in text inspector > more.
