Change Google Apps (YouTube, Maps) from English to Spanish? (Including Voice Dictation)

Hi,

So I’m setting up my grandpas first iPhone and since he speaks mainly Spanish I want it to be easy for him to simply open the YouTube or Google Maps app and to click on the apps microphone icon and he state an address or what he desires to watch on YouTube in his Spanish voice.

I’m wondering if this is a Google setting or perhaps individual within each app (YT, Google Maps) or if it’s a system wide iOS setting where I have to change the iPhone to Spanish.
