Change Keyboard "Alt + letter" Shortcuts

Hi,

Simple question - haven't found an answer from googling/exploring preferences.

I would like to be able to change some of my keyboard shortcuts. For example, alt+a gives å - this character is useless for me, but something like alpha would not be.

Where would I go about changing these keyboard mappings?

You can't to my knowledge, certainly not with the built-in software. There may be 3rd-party software that lets you do it.
