what i mean by this is can i change the volume for just texts, email, etc. without changing the volume for incoming calls?

Volume up or down controls volume for all notifications, there isn't a way to do what you are asking.
now that is pretty stupid! makes no sense to me because what if you dont want to have a loud text notification but still want a loud incoming call ringer? *sigh* its whatever i guess lol.
