I just need some quick understanding of how the fingerprint security functions. If my phone is locked with fingerprint and 6-digit passcode, and I decide to change the 6-digit passcode, do I have to rescan my finger or does it keep it stored?

Correct. You can change the passcode or change it to a pass phrase and the fingerprints remain.
