Install OpenSSH under networking in Cydia.

On Mac open terminal and type:

ssh root@youriPhone'sIPaddress
pwd: alpine

you then type passwd (if I remember correctly)
you then enter the new password twice - done!

i read that version of terminal installs a bunch of junk on your phone.
