Is there any way to do this? For example I would like iOS to open Chrome when I search for something in spotlight instead of the default Safari

There have been a few tweaks that do this (openanother is one) but I have not seen any for this JB yet.

I would like to open fantistical when I click on the calendar app.

I don't think that's quite what the OP was asking. It doesn't sound like he wants to open Chrome when he clicks on Safari, but instead wants the phone to default to Chrome for links instead of Safari.

But since you mentioned it, OpenOther is working for me (iPhone 5, 8.1). I think it's in Cydia now, but I got it from here and installed through iFile. Just make sure you get the 0.0.1-10 version. The 0.0.1-7 version (which worked on iOS 7) sent me into safe mode when I tried to open any app.

If I understand you correctly, something like Browser Changer (which has been updated for iOS 8) might be what you are looking for. I don't use it, though, so I can't say for sure if it will do what you want.

While I have used apps like browserchooser, browserchanger before, they do not modify spotlight behavior. Spotlight still brings up Safari for all web searches :(
