Hi. What do I select for # of partitions on a MacBook Pro 15 inch? I haven't started yet, but I was hoping to understand what this means before I take it apart.

Any other advice before I start? I saw a good YouTube video that seems to make is easy to do.

Well for OS X you just want 1 usually, that fills the entire disk. Then if you use boot camp, you can add a second one using the wizard easily.
 
I used to have two partitions on my iMac but it ended up being a bit too much trouble. Boot Camp won't work if you partition your main drive and I found myself running out of space due to installing large apps like the Final Cut Studio (even when I gave my system partition a fairly generous 80GB).

As long as you keep a good back up of your main drive partitioning shouldn't really be something that you do IMO.
