Changing my Wifi in MBP to UK Region, to use UK Chanels

The option seems to exist in Airport Utility, under Wireless>Wireless Options. Maybe it is Network dependent not Adaptor dependent, so local MBP actions will be ineffective.
Try creating a new Network with specific UK settings and see if your MBP connects differently.
