Changing sims after activation?

I've bought a 1.1.1 activated/jailbroken iPhone off eBay. If I want to unlock it can I just go ahead with the unlock with my own sim card, or will I have to virginise it and start over from scratch, reactivating etc? Or would it be worth me using IPSF instead?
