Changing the english language region in Pages

How do I change the spelling region in Pages from US to UK? I have localised everything in system preferences but I am still getting American spelling suggestions in Pages.

very helpfull, but how do i choose a language that is not in the list?
for instance i need to use Slovak (slovencina) language which i do have instaled on my mac, (i just have english on the top of lanugages bar in system preferences)
but in the Pages inspector of lauguage i can't finde that language in the list (infact the list is prety short) and neither can i find some feature to add the misign language, please help me

If it isn't in the list then, unfortunately, it is unsupported it.

isn't there a way to add it? i mean the system is surely expandable,
(else one is forced to use ms office again what is a bit upseting)
