changing the "from" field in mail.app

the "simplicity" of mail.app is driving me nuts. how do i change the "from" field to another email address without setting up a new account? for example, i'm using dot mac but at times i need the from field to reflect my school's email address instead of mac.com. i do not want to use the "reply-to" field cos the email will still reflect that it's sent from my .mac account.

any insight will be appreciated. TIA.
