I have both the apple provided dual usb c 35 watt charger as well as one of the Anker Nano GaN 65 watt charger. I use my computer exclusively plugged into the power source at all time. Are there any long term benefits of using 1 over the other or is it negligible? I do notice that when i use the apple 35 watt unit it stalls the charge at 80%, is this significant in protecting the battery long term?
 
The charging stalling at 80% may be Apple's optimized charging. Mine will charge to 80% until about 3:00 AM at which time it will reach 100%. The charging logic is fairly well designed and it will not hurt the battery to be connected to the charger for long periods. I use the 35 watt charger on my M2 Air 13" constantly plugged in a couple days of the week. No issues.
 
Slower charging rate leads to less heat in battery. In general, it's better for battery health. But is 65W charging much worse than 35W? Not really.

If you are not in a hurry, use the 35W charger. Otherwise, use a larger one. I even tried my 140W MBP 16 charger for MBA 15. But it could only charge at maximum 71W.
