do any of you charge your watch while it’s off? Does it even charge while it’s off?

This is not true. You cannot charge your Apple Watch while it's off. Even when the Charger is connected to the Apple Watch while it's on, you can't even select the option to power the Apple Watch off or its greyed out. The Apple Watch automatically turns on when the charging puck is connected.
