Saw this on AppShopper the other day and had to post it. Can easily say this is definitely worth the 4 bucks, but right now it's free at the Mac App Store. 
You basically open it to a folder of your choice, and it organizes all the filetypes into sections - Pictures, Text, Archives, etc. If you like what you see, you push the little checkmark box in the top right corner, and boom, it does it for you.
You can customize the filetypes and folder names in the settings too.
If your Documents and Downloads folder is a pigsty like mine was, I'd recommend you check it out, free or not it's great.
