I've had problems with COTV messing up it's connection preferences, and the "-" button being disabled so I can't delete them. I've tried deleting ~/Library/Preferences/com.geekspiff.chickenofthevnc.plist but when I restart COTV the file is regenerated and the problems are still there.

I've searched all over and haven't found any answers... any suggestions?

What version you running and your OS version? Have you updated to the latest version?
 
I'm using cotv 2.0b4, and OS X 10.6.1

and will look at the other VNC alternative suggested.

I have the same versions. I haven't used COTV in a few months as I use Screen Sharing to connect my other Macs and haven't needed to connect to my Windows machine. I noticed it listed my Mac Mini in the list and the IP was already filled in and un-editable. Also, like yourself, it could not be removed using the - button. It's because COTV is using Bonjour to discover machines with VNC sharing enabled. This can be turned off under the COTV menu. My Windows settings on the list can be modified and removed.
 
I just tried JollysFastVNC as suggested and after 10 minutes I like it! A little cleaner interface than COTV...

I wanted something other than the Mac built in screen sharing as I wanted a read-only session, something you can't get any more with Snow Leopard.
