I’ve set up my first child account on iOS. I see. I way to change the profile picture on the account. What am I missing? I’ve tried logging into iCloud and doing it from the child device that’s logged into iCloud on iOS I’ve also tired it from my account. I see no way. Thanks.
 
It should work the same way it does for your own account, but you do it on the child's device, provided the child is logged in to his/her iCloud account on that device.
That is, you go to Settings, right on top of the list there's the kid's current photo and name, tap on that, then the Apple ID settings open and the photo has an "EDIT" caption at its bottom. Touch the photo and you can change it.

That's what I thought, but there is no open to change the picture. The iCloud account with the child's name is greyed out and cannot be clicked (see picture).

My guess is you probably have Screen Time enabled and not allowing Account Changes. See link below for more info.
