Is there a key to hold during boot that will bring up a menu to choose the startup disc?

I know you can set it in system preferences for the next reboot, but can you choose DURING boot?
 
If you have an non 2011 MacBook Pro (only model that brightness does not work) you can use reFit. reFIT popsup a bootmenu that allows you to select your boot drive with out holding a key. The reason 2011 macbook pro is not recommended is because for some reason refit messes up the brightness control on these models.
 
Or if you're just thinking about booting into Windows I recommend Bootchamp. A free app that lets you boot to bootcamp through a menu bar icon.
 
There isn't anything like a PC syle Bios to set startup disk.....but if you want the selection to stick you can go to preferences>Startup Disk and pick which you want the default to be.
