Hey I was just wondering if there's anyway I can use the Apple LED Cinema Display 27", converting the Mini DisplayPort (male) into a HDMI (either male or female), so I can use it through a receiver or from a xbox 360?

The maximum resolution is limited to 1080p, though the entertainment devices you mentioned will only have that as maximum resolution anyway.

That adaptor won't work, because you're looking at a female HDMI - male mnDP. OP should look for female HDMI to female miniDP, which I don't think is available yet. Other solution is the altona DP 400, but it's pricey.
 
Why can't the cinema display just support HDMI? It seems like such an obvious feature for a huge screen like that. Hopefully if the ACD gets refreshed with Thunderbolt, Apple will also add HDMI like they did for the mini.

The ACD is meant for Apple products, thus it will be limited to MDP for the foreseeable future.
