I play civ 6 on my base 2016 MacBook Pro, 13”. I have to play on the lowest settings and small maps, but it works. I’m curious if anyone has played it on the 2020 16” MacBook Pro. How well does it run and on what settings?

Yeah i have played some Civ6 on my Macbook Pro 16. Can play with good settings. It's been i while since i played but graphics on at least mid and ram usage near max settings.
My biggest issue with Civ6 was (a few months ago) that the game crashed on Mac os Catalina from time to time - if that is a Catalina or Steam problem i don't know. Also played with bootcamp and that worked much better then. Hopefully Catalina and Steam works better together now.
A tip is to disable turbo boost with Turbo Boost Switcher. Temps get better that way.
It takes them ages to release updates on the Mac side, so you are always out of sync with the PC version, which means that your friends, mods etc. are all running different version of the game most of the time. I actually gave up in Civ 6 half a year ago because in the last 2 years my game was up to date probably only for 6 months (and that was because Firaxis didn't release any updates in almost a year).
My impression from this entire story is that the game is very badly designed and managed, making it very difficult for Aspyr to provide up to date ports. It took them more then a year to enable cross-platform gameplay, just because some geniuses on the original design team have made the way how math works incompatible between Mac and Windows (which is quite a feat I must say). And even then Mac-only multiplayer is terribly buggy, you get player out of sync and random crashes all the time.
