Clean switch iPhone 4 to 4S?

I am about to switch from my existing iPhone 4 to my new 4S however I want to do two things:

1. Move everything I have on my 4 to my 4S (including texts) and
2. Erase everything on my 4, so I can give it to my girlfriend :)

How do I go about that?
