Has anyone attempted to clean or replace the power supply fan of a Mac Pro 5,1? Is it hard and a lot of work?
I've been putting it off too long as I imagine it being a huge and time consuming job.
I imagine the fan having gobbled up a lot of dust as it's been noisier than when I first got the computer.

Removing it would be very difficult, I imagine. It's the one fan (besides the Cpu Boost fan) that is mounted in such a way that Apple probably does not intend for anyone to ever remove it.

you could try to clean it without taking it out. Remove the PSU and the Optical Drive assembly and then you've got access on both sides of the fan for dusting/blowing.
