With the release of the App Store and the plethora of Apps Apple already provides with the iPhone, my homescreens have filled up fast. I'm aware you can have multiple homescreens, but i'm a simpleton and less is always more.

is there anyway to get rid of some of Apple's built-in apps? I have no love for Weather or Stocks for example, and would like them gone. From what I can see there is no way.

Wouldn't this be nice?

While I agree, some people will never use the stocks app, youtube app, etc. There is currently to official way to remove them.

The best current solution is to move them to the last page of your home screens.

Just put them on a seperate home screen on the last one to the right :p

like me, my main home screen only consists of settings app, and the dock has SMS and Phone.

Actually I am like you, less is more, Im getting use to the multi home-screen but I do not like the itunes icon or the you-tube icon because i never use them. Here is an easy fix.

Just go to restriction in the settings and you can turn off each of the APP Store, Itunes, You-tube if you wish. After you go back to the home screen they are gone

Pretty Sweet, I wish they have a general way to do this for any of the icons. i bet it comes with 2.1

Lol, thats actually my most used icon.

So, you are too bothered to use the nice option of moving unwanted apps to a different screen, but you like the completely redundant and unnecessary Contacts app... boggles the mind!

Haha. I like the convenience of accessing my contacts without having to hit the phone button, yes. The reason being is that I house alot more information in there than just phone numbers.

Or maybe i'm just wild & crazy

Makes sense... and there's nothing wrong with being wild and crazy! :)
