In iOS10, you could single tap and clear all notifications from the lock screen with one tap or swipe left to clear a notification. It appear as though that's gone. Is that intentional? How do you clear all notifications with a single tap or just a single one? I can't figure it out.

To dismiss a single notification you firstly need to long press on the notification and then swipe down or press the ‘x’.

I’m not sure about clearing multiple notifications though.
 
From the notifications screen swipe up to go to recent notifications. 3D Touch the X on the right hand side and tap clear all

That applies to older notifications but on newer ones you need to 3D Touch to clear them individually. I liked the swipe left to reveal the clear tab in iOS 10 better.

This clears recent as well. I agree though previous method worked better to get rid of newer ones quickly
