Hi, I was wondering if you can edit the standard copy-paste select bar to integrate a new option in it that will work across all iOS applications?

Short answer No.
Well not across all applications.
You can create additional operations for your own app. Which you could then code as 3rd party framework that other developers could use if they think it's useful.
