I'm still getting used to pressing CMD-Q to quit an apple so that all of its related windows are closed. I spent decades on Windows machines where clicking the X in the top right corner of the program window would close not just the current window but all related windows and the app itself.

There used to be a plugin called Red X available that would ensure when you click the red X on Mac OS, it would quit the app too. However, I believe it's now defunct. Are there any other options for this sort of thing where if I click the red x it closes now the app too?

You're "on the Mac" now.
You're just gonna have to get used to "doing things the Mac way".

Lol... I'm trying! It's just so counterintuitive to me that hitting the red X doesn't quit the app altogether.

RedQuits is working in Catalina. Download RedQuits_v2.pkg from http://www.carsten-mielke.com/redquits.html
start the app and give it permission in Security & Privary - Privacy - Accessibility

Generally, only Apps that can only have a single window open quit when clicking the Red button, eg, Photos and iMovie. Strangely, iTunes doesn't follow this.

Because iTunes (and Catalina’s Music app for that matter) can play audio in the background and be controlled by the audio keys on the keyboard. Apps should more generally quit when they cannot do anything useful without the main window opened. That typically excludes multi-window apps and apps with important background activity. Conversely, some multi-window apps suspend themselves when no windows are open, even though it isn’t shown in the Dock (Apple calls this “app nap”).

I stopped caring about this and disabled the indicators on the Dock. I generally do not need to know which apps are running. The apps I use behave well and use no or very few resources when no windows are open or visible.
