So I had my new MBP 1 week and I spilled a cup of coffee into the keyboard. I took it to an apple store they did take it apart and no moisture sensors were triggered and they saw no moisture. I do however have my left shift key sticks down.

Does apple care cover this? Should I wait it out and see if it improves.?

If I bring it in they just send it out for repair so I will be weeks without a laptop

It will use up a accidental
Damage incident on your AppleCare+ (99 or 299) Due to liquid and will be a top case replacement even for one key

Well thats at least good news because I was worried spill damage was not covered. Nice way to ruin a fun new laptop.

AppleCare doesn't cover accidental damage. AppleCare+ does. If you paid the extra for AppleCare+ before you spilled the coffee, it should be covered, but not otherwise.

You may be able to fix your sticky key yourself, though. There will be videos about it soon, I'm sure.
