Has anyone tried these or seen it in person? Your thought on the quality?

I to would be interested to see how 1 actually looked fitted to an iPhone, of course you'd have to find someone with a 3G brave enough to fit a third party back cover that's liable to fall apart when you receive a text, but the pictures [on eBay particularly] always make them look quite well made, but then they would wouldn't they!? That said I wouldn't even consider taking my 3G apart to fit 1 of these, in fact I'd begrudge doing it even if I was fitting a genuine Apple back cover.
 
When i get time I'll be making a carbon fiber back.

I'll do both. one out of carbon fiber, one carbon fiber wrapped.
 
They also make them for the Original iPhone in about 6 different colors.

The use of tools to install is what makes it a problem. Please note that installing any of these packages will void your Apple Care warranty.

When I had my 1st Gen. iPhone, I wanted to change the backing because it was scratched and dinged in some places.
Some eBayers sell the kits. I wanted to buy one, but I didn't want to risk ruining my phone.
But if you are a risk taker, go on ahead and give it a shot to change the housing to whatever color you please.
But as suggested, you can try ColorWare starting at $150. It's worth it for them to do it if you are desperate to change the color.

Sucks for that guy on ebay that paid waaay too much for the pink iPhone. Seller was claiming it was a one of a kind and the thing didnt even have a pink sim card tray... someone got hosed.
