I am the proud owner of a brand new 2011 15" MBP 2.3 GHz i7 currently with the 750G HD and only 4 G RAM. It has the high rez. anti-glare screen, there seem to be some standard colour settings but I'm wondering which of them is best or if I should use a program of some sort to calibrate it. I don't do a lot of photo editing, but it is nice to see colours on your screen as they should be. I currently have it on one of the LCD settings.

I have the same machine (albeit with 8gb).

Just leave it on the stock settings.

I'm a serious photographer and run a calibrated workflow. You'll find that modern Macs are very color-accurate right out of the box. Close enough that I frankly no longer bother to calibrate my MBP screens.
