When I open a folder the columns of info, such as Date Modified, Size, Kind, etc. are always waaaaay off to the right and I have to scroll to the right to see this info. How can I set it so that all of this info displays closer to the file name by default?

Mouse across the window header bar. The mouse cursor will change to a double arrow when positioned on a column header separator. Drag the separator, between name and whatever is your second column, to the left, until you get to your desired spacing.
Experiment a bit - it will work. You can adjust each column with that method, although the Name column is one that will likely give you the width that you prefer.
 
I end up doing this all the time. What I'm wondering is if there is a way to set it up so I do not have to do this each and every time I need to see the other columns of info in my folders. Someway to change the default amount of spacing that displays between the first column and the others.
