Incredibly frustrated with the HORRIBLE Big Sur background images. Tried every option listed on the various forums to select the background image I WANT but Big Sur keeps changing the image back to that UGLY multi-colored vomit.

Sorry, but I also despise the "look" of Big Sur (icons, etc. - looks like something a kindergartener might have come up with), but I grudgingly deal with it. I also DON'T/will never use messaging and am irritated with all the requests by Apple to enter my Apple ID info - NOT GONNA HAPPEN!

I've been using Macs for the past 17 years and each year apple keeps imposing more requirements on users to "fall in line" with their demands, which is one of the reasons I still use my Windows PC's.

Apple is much more of a "Nanny state" than Microsoft ever was or is . . .

Do you mean the picture that shows up when the computer is logged out on the lock screen? If so, I would suggest following these instructions (until around 4 mins). If it is your desktop wallpaper that doesn't change, can you create a new folder with desired pictures and add it in the Desktop & Screensaver pref pane? Or, this is slightly more involved, but can you reinstall macOS? It just reinstalls the OS and keeps all your files, but it takes about an hour. This should fix an issue like that.

I agree that the Big Sur default image is sub-par. But the worst is the same wallpaper in dark mode. I do not know how they released something so ugly. And the default nature screensaver photos, which actually used to be good now consists of 5 pictures in none other than the portrait orientation. It's like a joke.
