configuring the side-button or digital crown to auto-launch a particular app

Is it possible to configure either the side button or the digital crown to launch a particular app (that we are developing)? Meaning to somehow specify that if the user presses the side button or the digital crown x times or for x long, the user will be taken to a particular app? For instance, by default, double tapping the side button takes you to Apple Pay.
