If I want to record for playback on a computer which orientation (landscape/portrait) should I hold the camera for widescreen picture?
 
By camera I assume you mean the iPhone. For wide screen the Home button should be at the left or right. If you start recording with it at the top or bottom then switch as it is recording you will not get a proper video. You must start recording after the Home button is at the left or right for proper wide screen.
 
A cool feature of iPhone 4 you can't do with the previous iPhones: hands-free shooting. You can set it down on its side and it'll remain upright (while naked of course).

I can balance my 3Gs on it's speaker/microphone. I do it all the time as I'm bored in my classes. It's unstable but it works.
