I'm connecting the MBP 16" to the host Thunderbolt port, and another Mac mini to the other Thunderbolt port. However, only one computer can see the dock and most of the time it's the Mac mini. Is there any way for two computers to see the dock at the same time, or at least prioritize MBP over Mac mini? Thanks!

(I wish but that’s not how Thunderbolt works. Are you sure the Mac Mini isn’t connected to the host?)
 
There is a Thunderbolt 2 KVM switch but not a Thunderbolt 3 KVM switch last time I checked. Only one computer will be able to use the dock at a time but with a KVM switch you don't need to switch cables.
