I was wondering if there was a way I could directly plug my iPhone into an Airport Extreme ac and allow it to act as the modem. When my internet service goes down, it would be an easy thing to leave everything as it is but replace the modem with the iPhone to supply the internet.

Is this currently done easily? I can't for the life of me figure out a straight forward way to accomplish this task.

I have never tried this, but you might share the iPhone's Internet connexion via wifi, and use the Airport Extreme as a wifi extender ("extend a wireless network").

If you use Airport Utility 5.6, you can have several profiles, one for your normal use ("create a wireless network" for instance), and another one to extend the iPhone's wifi network.
 
If that doesn't work and you have a Mac you could USB, WiFi or Bluetooth tether the phone to the Mac and share the Internet connection over Ethernet to the AirPort.
