I’ll preface this with it is a dumb question.

I’ve owned Macs forever but would like to switch to a laptop only, replacing my Mac Mini and old MacBook Pro.

I do want to be able to connect the MBP 16 to my 27” 4K monitor and use my external keyboard and mouse at times.

How do I do that? Can I keep the MBP closed? I’m used to docking stations with PC laptops.

It works. You can keep your computer open or closed. If your monitor uses traditional ports (HDMI, DisplayPort), you will need a cable that connects USB-C to that port.
 
My 2014 15 MacBook Pro is sitting in a vertical stand connected to a Logitech Wired Mouse and a Wired Mechanical keyboard and a Dell 27" 4K display. Works just fine. You've been able to do this for a long time.
 
I do the same with my 2018 15" MBP. I use it with lid open and the MBP screen as my main screen and a 27" monitor as secondary. I have a USB-C hub that I plug my external in via HDMI. Works like a champ.

I do unplug my MBP once a week or so and let the battery drain to 50% to ensure the batteries get a work out. I rarely use this MBP outside the home office...maybe once a month.
