Anyone tried this? I assume a USB to Optical adapter would be required since Apple got rid of the Optical out. Any other solutions perhaps?

Unless you just need a digital connection to your receiver, an 1/8" to RCA (assuming that's what the inputs on your receiver are) would be easiest.

Yes, some sort of a USB audio interface with optical out would be your best bet.
 
On most MBPs you can get a 1/8" to toslink optical cable and run it directly into a device that has optical in. Theoretically it should work but I can't say i've tried it. Depending on the converters in your stereo, it might not provide any advantage other than the convenience of having a smaller, single cable to your receiver.
