I recently got the 15" 2017 MBP, and have 3 Thunderbolt 2 displays. I work from home, but also take the laptop on the go almost daily, and right now I have 3 cables coming out of the MacBook (1) Power (2) TB3>TB2 adaptor with 2 monitors daisy-chained (3) TB3 > TB2 adaptor with 3rd monitor.

It appears I can't daisy chain 3 Thunderbolt Displays together. Can anyone think of the best solution that results in the least number of connections to the laptop?

Can a TB2 monitor be plugged into a Mini DisplayPort? I was thinking of grabbing the OWC Thunderbolt Dock for an all-in-one solution. I could plug 2 daisy-chained monitors in the TB3 port, and the third monitor on the MiniDP port. Since this would also power the MacBook, theoretically I'd only have one cable going to the laptop. Would this work?

I don't know the answer, other than a "feeling" that won't work.
If you have 3 thunderbolt displays, then you would need thunderbolt connections for all of them, and the thunderbolt display won't operate through the mDP port. (AFAIK, the third display would need to be one with a displayport/mDP connection
However, OWC usually has pretty good tech support answers, and that should be a place to ask your question.
