Have a chance to get the Apple Watch 7 or the Apple Watch 6 from T-Mobile for pretty much the same price. wondering if the 7 is the better choice of the 2.

Actually just went to the T-Mobile store by me and they told me I can get the Apple Watch se for $199.00 and they only had the series 7 in a colour I could have lived with, but I wanted gold or red and they had the se in gold... so got the se. don't really need the ecg function so I guess it was a good deal.

Congrats, while there are more differences between the SE and the 7, I assume it is a cellular version and that is a good price.
So enjoy

it is cellular since it had to have a line attached to it, but supposedly it uses my iPhone for messages and phone according to the sales person

Only when they’re close enough for a Bluetooth connection. If you separate them, and not on a Wi-Fi, cellular will automatically kick in.

however it uses the same phone number if I make a call from it, or maybe not since my iPhone was in my pocket when I tried it with calling a friend of mine on it.

Ah yes, ok, it does use the same number in that sense. I misunderstood what you were saying. The Apple Watch has a separate number for billing/logistics purposes only but for practical purposes of making calls and texts, it uses your iPhone’s number.
