Contacts from Exchange and iCloud

My dad just got an Apple Watch, the contacts on his iPhone are from iCloud and from his works Exchange account.
On his iPhone he doesn’t display his Exchange contacts in his phone and contacts app because Exchange adds every email you receive to the address book for some reason.
How do you get the contacts to only display from iCloud?
