Address Book and Contacts on the Mac use a checkbox to make a contact sorted by company instead of name. This carries over the cloud to iOS devices as well, so that's consistent enough.

However now, I'd like to change a contact from sorting by company to the person's name. On iOS, how can it be done? Obviously the flag is there because iOS honors it!

If iOS can't change it, is there a third party contacts app that can toggle it?

EasyContacts is the answer

The best app out there (to sort by COMPANY NAME) that nobody knows of is called "EasyContacts". Be sure to search for it was written in the app store. It is money well spent. Every person I show this app to decides to buy it. I use Card Scan still to scan business cards and then export the contacts to Outlook. I then sync my iPhone via iTunes to read my Outlook contacts. PERFECTION!!
