Control airplay started on other device

I play music to 5 airplay speakers, usually via an old phone that sits in a central location and is dedicated to this. Can I control volume, pause, etc from my watch?

Based on what you described, I don’t think so. My experience is: if you can get the speakers and music to appear on the ‘now playing’ of the iPhone your watch is paired to, then you can control it from the watch. Otherwise, no.
