Control Bluetooth headset paired to phone?

If I have the phone in my pocket and my headphones are paired to the phone, can I control the playback via the watch?

People are always talking about BT headphones used with the watch.

I want to leave the phone in my pocket and control music and answer calls with the watch that are handled by the phone. Even with the wired headphones.

Is that not possible?

I would guess yes. Other than volume you should be able to control calls and media play.
