Before watchOS 10 I was able to name favorite apps in control center, now I just get a list in alphabetical order in list view. Is there a way to edit the list, ie order the apps regarding most used?
 
I think you mean using favorites in the dock in watchOS 9. That‘s gone. The only dock left is recent items by double pressing the crown.

What we have now is the app view by pushing the crown once, and it seems you have it set to (alphabetical) list view. Go into Settings and change App View to grid view, and you can sort that by your favorites by long tapping an icon while in grid view. You can then drag the icons around.

My favorites: Camera Remote, Timer & Calculator.
